when using the surname Mills, how do you write the plural? how about the surname Evans?

Shannon, if you want to make a plural sentence you would add 'es' to the end of the surname. For example, 'All of the Millses were at the party' or the 'The Evanses went on vacation to Tahiti'.
To make a possessive you would add 's. For example, 'The Mills's dog was lost last week' or 'The Evans's house is Victorian'.
